Turmeric and ginger banana bread

Both turmeric and ginger possess powerful anti-inflammatory properties, which can be useful in lowering systemic inflammation, easing muscular and joint pains, menstrual cramps and calming your mood. Today I bring you a recipe which harnesses the aromatic flavours of turmeric and ginger in a sweet dish - say hello to my turmeric and ginger banana bread!

Beyond the anti-inflammatory properties provided by the turmeric and ginger, this delicious recipe contains more fibre, healthy fats and essential nutrients than your traditional banana bread, helping to support blood sugar regulation which can in turn can reduce inflammation levels in the body (to read more about the importance of blood sugar control, click here). For an interesting twist on your usual tea-time nibble, try out this bake!

Ingredients:

  • 100g gluten free or wholemeal flour
  • 50g mixed milled seeds
  • 3 eggs
  • 3 ripe bananas, mashed
  • 1 large carrot, finely grated (approx. 90-100g)
  • 1 tbsp ground cinnamon
  • 1.5 tbsp coconut oil, melted
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp ground turmeric
  • 1 tsp ground ginger
  • Pinch of black pepper
  • 2 tbsp collagen powered (optional)

Method:

  1. Preheat the oven to 180c
  2. Simply place all the ingredients into one big bowl and mix!
  3. Cook for 25-30 minutes until cooked through
