Collagen Chocolate Energy Balls

These collagen chocolate energy balls make the perfect snack or on - the - go breakfast. Loaded with fibre, healthy fats and protein they're perfect for giving you consistent energy levels. Plus, the collagen peptides will not only provide protein, but help to support your joint health too.

This makes them especially great on days when you're being active. An added bonus is that they're super easy to prepare - just whizz up in the food processor and roll into balls!

Ingredients:

●1 cup nut butter of choice (almond butter and hazelnut butter are my favourite! Use sunflower seed butter for a nut-free option)

●1/2 cup rolled oats

●1/4 cup collagen peptides

●6 medjool dates, pitted

●2 tbsp cacao powder

●2 tbsp ground chia seeds

●2 tbsp ground flax seeds

●1 tsp vanilla extract

●1/4 teaspoon salt

●1/4 teaspoon ground cinnamon

●1/4 cup desiccated coconut (for coating, optional)

Method:

1. Place all the ingredients except the coconut into a food processor and pulse until the mixture is crumbly and slightly sticky.

2. Roll into 12-15 balls, and then roll each one in desiccated coconut if desired.

3. Place in the fridge for 30 minutes to firm up.4.Enjoy!
